For some reason, Microsoft doesn’t make it easy for users to extract their form data for use in Excel. While they should give you the option of simply saving the form data as an Excel spreadsheet, they make users go through a few extra steps to transfer the data. Although this is a bit of a hassle, it is easy enough to do. With the form document open, select Options from the Tools menu:
